Ingredients
Here’s a look at the simple ingredients you’ll need to make this peanut butter and marshmallow sandwich with blueberries.
- Gluten-Free Bread: Use homemade or your favorite store-bought brand. You’ll need 2 slices for your sandwich.
- Peanut Butter: I recommend using natural peanut butter for the best flavor, but conventional store-bought peanut butter works too. Be sure your peanut butter is salted and unsweetened.
- Blueberries: Add a sweet-tart flavor. Be sure to wash and dry your blueberries before using.
- Marshmallows: Add sweetness and creaminess to the blueberry-marshmallow spread.
- Butter: Adds richness and the fat helps the mixture melt properly.

How to Make the Best Peanut Butter Sandwich
Get started by gathering all of your ingredients and materials.
- Step 1: Get ready. Gather all your ingredients together that you need.
- Step 2: Make the blueberry-marshmallow spread. Add the blueberries, marshmallows, and butter to a microwave safe bowl and microwave. Stir the mixture until only small pieces of the blueberries remain. Allow the mixture to cool at room temperature before using.
- Step 3: Make your sandwich. Spread the blueberry-marshmallow mixture on one slice of bread.
- Step 4: Finish assembling. Spread the peanut butter on the other slice. Put them together and slice in half or quarters.
Seasoned Tip
Chill first!
Put the blueberry-marshmallow mixture in the fridge for about 10 minutes to cool it more quickly.
Variations
- Dairy-Free: Replace the butter with a plant-based version and ensure the gluten-free bread you are using does not contain dairy.
- Vegan: Use vegan marshmallows such as the Dandies brand as well as a plant-based butter and ensure the gluten-free bread you are using does not contain any dairy, eggs, or honey.
- Peanut-Free: If you’ve got a peanut allergy, feel free to swap the peanut butter for another nut butter such as almond or cashew. If you are allergic to all types of nuts, try using sunflower seed butter instead.
Serving Suggestions
- This sandwich is great for lunch for work or school or even as a snack.
- Turn this recipe into gluten-free uncrustables by using a sandwich press to create the rounded shape and seal the sides. You can also use a wide mouth jar and crimp the edges by hand.
- Channel your inner Elvis Presley by making a fried peanut butter sandwich! A fried, or grilled, pbj sandwich can be made just like grilled cheese. Simply make your sandwich, heat butter in a skillet, and cook until both sides are golden brown.
Tips & Tricks
- Check ingredient labels: While all of the ingredients in this recipe are naturally gluten-free, always be sure to check labels to avoid the risk of cross-contamination.
- Multiply as needed: Need more than one sandwich? Multiply the recipe to suit your needs.
- Enjoy immediately: This sandwich is best enjoyed right away, but you can pack it up for lunch on-the-go if you’ll be eating it that same day. Wrap it in foil or place in a sandwich bag and keep cold with an ice pack.
- Toast the bread: Gluten-free bread is often sold and stored frozen, so feel free to lightly toast it if you don’t have time to defrost it.
While fresh blueberries are best, you can use frozen blueberries if fresh ones are unavailable. Note that this may change the cook time.
I don’t recommend using different berries in this recipe. Unlike strawberries, raspberries, and blackberries which are firm, blueberries have a soft texture which causes them to bleed when heated. They also have just the right amount of sweet-tart flavor for pairing with the marshmallows and peanut butter.
